I must admit, I love mozzarella caprese however I am not a fan of tomatoes. I came across this recipe while browsing through cooking magazines and immediately had to try it. I was lucky to find the last peaches in season however if you can't find peaches this recipe is just as good with pears.
Directions are simple and this is such a crowd pleaser!
1. Slice the peaches or pears in rounds
2. Grill the fruit on the stove top, use a capful of olive oil and grill for about 10 minutes or until the fruit softens. Remove from heat and let cool.
3. Layer mozarella, basil and then the fruit and repeat layering steps.
4. For extra flavor drizzle balsamic glaze over the top and serve!
