Tips for Tuesday

Well, I officially started my kickoff to bikini season by signing up for the Tone it Up program designed by Karena & Katrina (for more info click here) and I must say I am psyched to be on a kick. So psyched that I actually dragged my bum out of bed a half hour early to do a workout video...who am I?  Well, for one, I am determined to stick to it, excited to see the results!

I have been browsing Pinterest (I'm a visual girl, gotta have pictures) for healthy recipes to incorporate into my menu planning and this one was easy and delicious. I tweaked the original a bit, check out the recipe below:

Makes 4-6 servings

1 Cup Quinoa
1 Orange Pepper
2 Kirby Cucumbers
1 Yellow Onion
1 Can Pinto Beans
1 Can Black Beans
1 Avocado

Bring 2 cups of water to a boil, add one tbsp. Olive Oil.
Add one cup Quinoa, turn flame down to a simmer (simmer for about 15 minutes stirring occasionally) set aside.

Chop raw vegetables, toss with the Quinoa. Add Pinto and Black beans, toss all ingredients together.
Top with Avocado.

    2 Tablespoons Freshly squeezed Lemon Juice
    1/4 Teaspoon Sea Salt
    3-4 Tablespoons Olive Oil
